Pineapple cookies not to be mistaken with Chinese New Year Pineapple tarts this one is sweet and moist with real tropical flavour. But really, this cookies are so fluffy and chewy, you better get ready if your husbands, children, friends, mom, dad, sisters, brothers, cousins can’t get their hands away of these cookies and if you’re going to serve these pineapple cookies to guests, better make a lot of these! As a substitution, you can always replace shortening with butter. This recipe yield 2 dozens.
2/3 cup of shortening
1/2 cup of brown sugar
1/2 cup of white sugar
2 cups of flour
1 teaspoon of baking powder
1/4 teaspoon of soda
2/3 cup of canned crushed pineapple in juice
1/2 cup of nuts
1 teaspoon of vanilla
Preparation Instructions of Pineapple Cookies :
- Preheat oven at 375F.
- Cream shortening and sugars well.
- Sift flour with dry ingredients; add with egg and pineapple to creamed mixture. Mix well; stir in chopped nuts and vanilla.
- Drop by teaspoonfuls on greased cookies sheet.
- Bake at 375 degrees 10 to 12 minutes.
